Coffee Cake, Fluffy & Moist

Streusel Coffee Cake

Makes 1 8” square cake (20cm); about 16 squares per cake

 1 large egg
3/4 cup granulated sugar
80 gr melted butter
1 1/2 cup self rising flour
1/2 cup milk
1 tsp pure vanilla extract

Streusel Topping:
1/2 cup brown sugar
1/4 cup flour
60 gr butter (room temp)
1 tsp cinnamon

First prepare the Topping:  In a small mixing bowl, combine the topping ingredients.  Use a fork to blend with a fork til crumbly, so that your fingers don’t melt the butter too much. Put aside.

Preheat oven to 375°F (190°C) and place rack in center of oven.  Grease your pan.  My favorite is the Pyrex Bakeware 8-Inch Square Cake Pan, which is much easier to cut neatly than a round pan.  I like to spray it with Pam Original Cooking Spray, instead of the mess and hassle of buttering or greasing the pan.

In a medium bowl beat together the egg, sugar and then add the melted butter.

Add milk and vanilla, alternately with the flour and mix well.

Pour batter into the greased pan and sprinkle topping crumb mixture evenly over batter.  Bake at 375°F (190°C) for 30-35 minutes.

Partially cook in pan on wire rake.

Cut coffee cake into squares while still warm.  It is best served warm.

Makes One 8” square cake (20cm); about 16 squares per cake.

Variation:  A wonderfully fresh, summery version is to add 1 tsp. poppy seeds to the batter, and instead of the streusel topping, drizzle with lemon glaze.

With the streusel topping each 2” square has: Calories 165.7, Total Fat 7.5 g, Saturated Fat 4.6 g, Polyunsaturated Fat 0.3 g, Monounsaturated Fat 2.2 g, Cholesterol 30.8 mg, Sodium 159.1 mg, Potassium 22.9 mg, Total Carbohydrate 23.9 g, Dietary Fiber 0.1 g, Sugars 14.6 g, Protein 0.9g, Vitamin A 7.0 %, Vitamin C 2.8 %, Vitamin D 3.1 %, Calcium 4.5 %, Folate 4.2 %, Iron 4.6 %, Niacin 3.5 %, Riboflavin 3.4 %, Thiamin 4.4 %.

So, you can see that if you want to indulge in some calories, but don’t want to go overboard, just omit the streusel topping! You’ll “save” 50 calories per 2″ square!!
